Embutido


Description:
Embutido is one of the holiday staples my lola used to cook back when i was a little girl. This is my take on that holiday tradition.

Ingredients:
500 grams ground pork
1 carrot, minced
1-2 tablespoons pickle relish
2-3 cloves garlic, minced
1 whole onion, minced
2 eggs
2 tablespoons all purpose flour
salt and pepper to taste
4 jumbo hotdogs, or vienna sausage or boiled eggs equivalent

Directions:
1. Mix first eight ingredients in a bowl.

2. To check the taste, heat a pan and fry a teaspoon of the mixture. Adjust the timpla based on your preference.

3. Cut aluminum foil for wrapping.

4. Divide the mixture into four.

5. To make a loaf: take half of a quarter mixture then spread flat on the aluminum foil. Place the hotdog/vienna sausage/boiled eggs at the center then cover it with the rest of the mixture.

6. Roll the foil until you form a tight loaf then seal it at opposite ends.

7. Steam the embutido for an hour.

8. Once cooked, let the embutido cool then place in the refrigerator before serving. This is good with ketchup.
